Chef Julien Royer wins the Estrella Damm Chef's Choice Award 2023

The award was granted within the framework of The World's 50 Best Restaurants, the list of the 50 best restaurants in the world, prepared annually by British magazine Restaurant

Within the framework of The World's 50 Best Restaurants, Julien Royer, chef and owner of Odette (Singapour) has been recognised with the Estrella Damm Chef's Choice Award 2023, thanks to votes from his own colleagues.

The prize was awarded last Tuesday during the gala held in Valencia where the list of the 50 best restaurants in the world was revealed, a list that is prepared annually by British magazine Restaurant. The restaurant known as Central (Lima, Perú) owned by Virgillio Martínez and Pía León headlined the list of the best restaurants in the world. It was followed by Disfrutar (Barcelona) and Diverxo (Madrid), second and third places respectively.

After receving the Estrella Damm Chef's Choice Award, Royer was extremely thankful: "It is a fantastic acknowledgment, and the fact I was chosen as the winner by chefs and for chefs makes it even more meaningful. There are a great deal of talent and several people I truly respect and admire present in this hall today; to have been chosen by them is very special to me."

Originally from Auvergne, France, Royer settled in Singapore 15 years ago to create his own style, which blends traditional French cuisine with the world of Asian restaurants. At his three restaurants -Odette and Claudine in Singapore, and Louise in Hong Kong- he develops local talent to cook and serve his sophisticated French cuisine, which includes emblematic dishes such as quail with Kampot pepper crust and Yuzu cake with Shiso and Basil. His flagship restaurant (Odette) was voted the best restaurant in Asia in 2023 and is currently number 14 on The World's 50 Best Restaurants List.

The Chef's Choice Award is the only award from the World's 50 Best Restaurants show, which is granted based on voting from among chefs themselves. Awarded to a chef that has contributed positively to the world's culinary arena over the last year, the winner is chosen by the teams from those restaurants that are included in the best restaurants of the world list.
